Tabouli (gluten free, vegan)
This Lebonese dish is great as a side salad to any summer cuisine. Also goes great with hummus for a snack or in your favorite wrap.
You will need:
- 1 cup quinoa
- 1 cup water
- 2 cups chopped Italian parsley
- 1 red onion – chopped
- 2 medium to large tomatoes diced
- 1 large cucumber diced
- Juice of 1 large lemon
- ¼ cup olive oil
- ¼ tsp salt
- ¼ tsp pepper
- Add water and quinoa to a medium sauce pan and bring to a boil. Stir and reduce heat to medium and cook for 15 minutes. Then stir and turn off heat and allow to sit until water is absorbed.
- Combine cooked quinoa with the rest of the ingredients in a large bowl. You may want to adjust the lemon, salt, and pepper to taste. Refrigerate until ready to serve.
