Tabouli – Gluten Free, Vegan

Tabouli (gluten free, vegan)

This Lebonese dish is great as a side salad to any summer cuisine. Also goes great with hummus for a snack or in your favorite wrap.

You will need:

  • 1 cup quinoa
  • 1 cup water
  • 2 cups chopped Italian parsley
  • 1 red onion – chopped
  • 2 medium to large tomatoes diced
  • 1 large cucumber diced
  • Juice of 1 large lemon
  • ¼ cup olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

 Directions:

  1. Add water and quinoa to a medium sauce pan and bring to a boil. Stir and reduce heat to medium and cook for 15 minutes. Then stir and turn off heat and allow to sit until water is absorbed.
  2. Combine cooked quinoa with the rest of the ingredients in a large bowl. You may want to adjust the lemon, salt, and pepper to taste. Refrigerate until ready to serve.
  3. Enjoy!
